When brewing, it is unique from the initial aroma with notes of berries that flood your senses. As the brewing comes to an end, the initial sip reminds us of cherries sprinkled with notes of plum and a fleeting hibiscus note. However, it does not stop there! This coffee is much more complex with undertones of cinnamon spice and raspberries. It has no perceivable bitterness with a pleasant medium acidity. It is a balanced cup with a juicy medium body and brown sugar sweetness. Overall, this coffee is very fruit forward, complex, and will please any palette whether you’re new to specialty coffee or a coffee connoisseur.

This particular coffee goes through an anaerobic natural process in which the raw coffee cherries are processed underwater for an extended time. The combination of longer fermentation times promote the creation of new flavors that weren't possible in traditional processing methods.
